Turkey legs, pulled pork, lamb & chicken sausages and pork tenderloins
are being packed. 5 racks of ribs are now smoking, and a salmon fillet
is up after that.

One down, one to go. Got it right this time, it’s the most tender pork shoulder I’ve
made. In the past I didn’t allow enough time for the collagen to break
down.

I’m waiting for my folks to show up at a restaurant in Woodbury for dinner. They’re I’m their 80s and I kind of worry about their driving. Funny thing is Mom still worries about me too. We want our loved ones to move safely through the world but we express it in negative terms so often.
